The province of Rome holds the record in production of extra virgin olive oil and engages a large part of the provincial territory. Latium holds several extra virgin olive oils protected by a Denomination of Origin among which the Sabina oil and the Terre Tiburtine oil.
The oils that bear the words P.D.O. (Protected Denomination of Origin) or P.G.I. (Protected Geographical Indication) are typical of a certain production area that have been recognised by the European Union. PDO products must be produced, processed and prepared in a specific region using traditional production methods. The quality or characteristics of the product must be due essentially or exclusively to its place or origin, i.e., climate, the nature of the soil and local know-how.
